Guillaume Sourieu, the chef
It is 5 years since Guillaume Sourrieu came back to his roots in
Marseille and took over the running of the l’Epuisette.
From his long journey by the side of the greatest French chefs,
he brings us the taste for high standards and the know-how for
which he is renowned.
His cuisine, inventive but with respect for the tradition of the
Mediterranean, delights in bringing into play both land and sea:
vegetables from Provence, fish from his fisherman friends in the
Vallon des Auffes.
« I like to cook by instinct, and pay enormous attention to the
quality of the products I use, choosing them also with respect for
their flavour. My aim is that, at every instant, whether in the
dining room or in the kitchen, we ensure that our guests are
guaranteed a unique and exceptional experience ».
